Just sent that to my flatmate, she is cooking turkey for Thanksgiving and has been panicking about it, if all else fails we can drink the bourbon...

A, my thoughts too. I figured once the bottle of bourbon is opened, there is no harm in drinking/cooking with it.

Thank you, Lady. The recipe was a success. I only managed to soak the turkey overnight; added lots of fresh sage and terragon as well as dried herbes de Provence and butter under the skin and into the oven it goes. The smell of bourbon permeates the whole house; cooking in a non-aircon kitchen never felt this great. The gravy sauce too was divine - I added some flour and more herbs to the drippings and of course a bit more bourbon and stock and voila!

Glad it worked Queenie ! I've never cooked a turkey, but it certainly sounded like an interesting experiment. :D :D
